Baijiu is a distilled liquor unique to China. One of the eight major distilled spirits in the world (Brandy, Whisky, Vodka, Gin, Rum, Tequila, Japanese Sake and Chinese Spirit). It is obtained by distilling the mash or fermented mash made from starch or sugar raw materials. It is also known as Shaojiu, Laobaigan, Shaodaozi, etc., and was called Baijiu after liberation. The wine is colorless (or slightly yellow) and transparent, with a pure aromatic smell. It tastes sweet and refreshing. It has a high alcohol content. After storage and aging, it has a complex aroma with esters as the main body. Various types of liquor are made using koji and yeast as saccharification and fermentation agents, using starch (sugar) raw materials, and going through a process of cooking, saccharification, fermentation, distillation, aging and blending.

Baijiu is warm in nature, sweet, bitter and pungent in taste. It has the effects of dispelling cold, helping medicine, promoting blood circulation and unblocking meridians, increasing appetite, eliminating fatigue, keeping out the cold and refreshing the mind. Moderate drinking can reduce the risk of cardiovascular disease and certain cancers. Drinking a small amount of liquor, especially low-alcohol liquor, can dilate small blood vessels, promote blood circulation, and delay the deposition of lipids such as cholesterol in the blood vessel walls.

Good food

The best alcohol intake for an average person is 75 grams (1.5 taels) per day, and should not exceed 3 times a week. It is safer to drink after 2pm every day. White wine is especially suitable for people suffering from rheumatoid arthritis. It can also be added as a condiment during cooking, and has a strong aroma.

Avoid food

It is not advisable to drink liquor on an empty stomach, before going to bed, when you have a cold or when you are emotionally excited, so as to avoid cardiovascular damage. It is also not advisable to drink in large quantities. Excessive drinking can cause acute or chronic alcohol poisoning, leading to chronic gastritis, malnutrition, neuritis, cirrhosis, pancreatitis, heart disease, arteriosclerosis, esophageal cancer, liver cancer and other diseases.

Moreover, liquor, beer, wine, fruit wine, etc. cannot be mixed. People with yin deficiency, excessive dampness and heat, hypertension, hyperlipidemia, gout, vascular sclerosis, coronary heart disease, tachycardia, cancer, hepatitis, cirrhosis, diabetes, esophagitis, ulcers and other diseases should avoid drinking white wine; obese people, frail elderly people, children, newlyweds or pregnant women should also avoid drinking white wine.

In addition, it is not advisable to drink cold wine. This is mainly because in addition to alcohol, wine also contains some methanol, formaldehyde and other small amounts of harmful substances that affect eyesight. The boiling point of the alcohol solution and water solution of these harmful substances after mixing is lower than 60℃. If the alcohol is heated, these substances in the wine will basically evaporate. So, drink warm wine.
