3. Make sure to fry the sweet potatoes until they are crispy on the outside and tender on the inside. When the sweet potatoes are ripe and have a crispy shell on the outside, you can remove them and drain the oil.

4. Take a plate and brush it with a layer of cooking oil

5. Put 1 spoon of oil in a non-stick pan, add sugar after the oil is hot, and simmer the sugar over low heat

6. When the sugar is completely melted and small bubbles appear, add half a teaspoon of vinegar and slowly simmer the sugar.

7. Turn off the heat immediately until the color of the sugar turns yellow and then turns red.

8. Put the fried sweet potatoes in and shake them a few times to make sure they are evenly coated with syrup.

Step 4: Shred ginger, dice green onion, slice garlic, and cut green pepper into pieces for later use

Step 5: Place the pot on the fire and add salad oil. When the oil is 80% hot, add shredded ginger, chopped green onion and garlic slices and fry until fragrant.

Step 6 Add the sweet potato and stir fry evenly.

Step 7: When the pumpkin changes color slightly, add white vinegar and stir fry evenly.

4: In the pot, add 2 tablespoons of salad oil and sesame oil each (I had a lot of sweet potatoes, so I added more oil), but the amount of oil is very important. Key point 3: It is best to add more oil than normal cooking, so that the fried Jinping will be shiny and not dry. Add the shredded sweet potato and stir-fry over high heat for about 3 minutes.

5: Prepare the seasoning. My family loves spicy food, so I added diced chili peppers and a spoonful of chili sauce. Those who don’t like spicy food can omit it. Brown sugar requires more sugar than regular sugar. If you use regular sugar, please adjust the amount appropriately.

6: When the sweet potatoes turn golden brown, you can add seasonings. Add brown sugar first and stir-fry, then add other seasonings. Stir-fry for about 1 minute, finally add 1 spoon of sesame oil and mix (point 4), sprinkle with sesame seeds, and done.
