There are many kinds of ham on the market. People may be dazzled when buying them and don’t know which one to choose. What are the differences between Yunnan ham and ham? In fact, the so-called Yunnan ham is a kind of ham. The Xuanwei ham produced in Yunnan is called Yunnan ham. People who don’t understand will think that these are two completely different foods. Let’s learn more about Yuntui. Xuanwei ham is produced in Xuanwei City, Yunnan Province. It is a national intangible cultural heritage and a national geographical indication product. Xuanwei ham has always enjoyed a very high reputation in China. As early as a hundred years ago, Xuanwei ham was sold all over the country, sold to Southeast Asian countries, Japan, and even as far as Europe.Xuanwei ham has a long history, which dates back to the Ming Dynasty at the latest. At the beginning of the 20th century, Pu Zaiting and others raised funds to establish the "Xuanhe Ham Company" and introduced machinery and equipment to produce canned ham. Subsequently, the "Yunnan Xuanwei Pu Zaiting Brothers Food Canning Co., Ltd." was established. Its products participated in competitions in Guangzhou and other places in 1923 and were well received by all walks of life. Mr. Sun Yat-sen wrote the inscription "Drink Harmony and Eat Virtue" for it, and since then it has become famous and sold far and wide to Hong Kong, Singapore and other places. Xuanwei ham is a fine bacon created by the Xuanwei Han people through hundreds of years of practice in curing bacon. Xuanwei ham is named after Xuanwei, Yunnan, where it is produced. Its main characteristics are: it is shaped like a pipa, but with small bones, thin skin, thick meat and moderate fat and leanness; when cut, it has a strong aroma and bright color, the lean meat is bright red or rose, the fat is milky white, and the bones are slightly pink, as if the blood is still moisturizing. Its quality is excellent and it is representative of Yunnan ham, so it is often called "Yunnan Ham"! The raw material for making Xuanwei ham is the plateau treasure Wujin pig. Wujin pig is the only free-range and domesticated pig breed in China's plateau ecosystem. It is also the pig breed whose living and eating habits are closest to wild boars. Wujin pig is famous for its delicious meat, rich in calcium, iron, zinc and omega fatty acids, and is suitable for breeding on plateau pastures. It is as famous as the Iberian black pig from Spain. The Wujin Pig is a grazing pig breed on the Yunnan-Guizhou Plateau. It is still raised in the "grazing + supplementary feeding + pen-raising" method, that is, the piglets are grazed in the wild, and then gathered in the morning and evening for supplementary feeding. The unique breeding method has earned the Wujin Pig a reputation for "eating Chinese herbal medicine, drinking mineral water, and growing healthy meat." Therefore, whether it is eaten fresh or processed into ham, bacon and other products, it has very good quality. The world-famous Yunnan Xuanwei ham is made from black gold pig, hence the saying "Xuanwei ham black gold pig". |
