There is no unified classification method for vinegar due to different brewing raw materials and processes. If classified according to the vinegar making process, it can be divided into brewed vinegar and artificial synthetic vinegar. Depending on the raw materials, brewed vinegar can be divided into grain vinegar, sweet vinegar (made from maltose and molasses), wine vinegar (made from white wine and edible alcohol), and fruit vinegar (made from fruit). Grain vinegar can be divided into smoked vinegar, special vinegar, fragrant vinegar, bran vinegar, etc. according to different processing methods. Artificial vinegar can be divided into colored vinegar and white vinegar. If classified by the raw material processing method, the grain raw materials are used directly to make vinegar without being steamed and gelatinized, which is called raw vinegar; the vinegar brewed after being steamed and gelatinized is called cooked vinegar. If classified according to the saccharified koji used in making vinegar, there are bran koji vinegar and traditional method koji vinegar. If classified by the acetic acid fermentation method, there are solid fermentation vinegar, liquid fermentation vinegar and solid-liquid fermentation vinegar. If vinegar is classified by its color, there are dark vinegar, light vinegar and white vinegar. If classified by flavor, balsamic vinegar has a stronger vinegar aroma; aged vinegar has a special burnt aroma; special vinegar has the special flavors of both balsamic vinegar and aged vinegar; and sweet vinegar is added with Chinese medicinal materials, plant spices, etc.

Artificial vinegar is made by diluting edible glacial acetic acid. It has a strong vinegary smell but no aroma. This kind of vinegar does not contain the various nutrients found in edible vinegar, so it is not easy to mold or deteriorate; but because it has no nutritional effect, it can only be used for seasoning, so if there is no special need, it is better to eat brewed vinegar.
