How to wash eel

When most people are cooking, the most worrying thing is washing the vegetables, especially for some things like fish, because fish must be cleaned thoroughly to remove its fishy smell, and many fish have scales, which need to be scraped off, and all the internal organs of the turtle need to be taken out, and the fish mouth must not be pricked by teeth when washing it, so how to wash the eel clean?

The eel is snake-like and cylindrical in shape. It has a thick head and a thin tail, and its body surface is protected by a layer of smooth mucous membrane. It has no scales, is yellowish-brown in color, and has irregular dark spots on its body. Its fins are underdeveloped and basically disappeared, and there is only one three-edged spine on its body. Its meat is tender and delicious.

Eel is rich in DHA and lecithin, which are the main components of the cell membranes of various organs and tissues in the human body, and are indispensable nutrients for brain cells. According to American experimental research data, regular intake of lecithin can improve memory by 20%. Therefore, eating eel meat has the effect of nourishing the brain and strengthening the body. The special substance eel element it contains can lower and regulate blood sugar, and has a good therapeutic effect on diabetes. In addition, it contains very little fat, so it is an ideal food for diabetic patients. Eel contains surprisingly high amounts of vitamin A. Vitamin A can improve eyesight and promote skin metabolism.

1. Pour 90°C hot water on the fish, scrape off the mucus that has turned white with the hot water with a teaspoon, and then rinse with cold water. This method is fast, convenient and efficient, but it will slightly damage the fresh and smooth taste of the fish skin.

2. Sprinkle 0.5-1 tablespoon of coarse salt evenly on the fish body, scrub it vigorously, then sprinkle an appropriate amount of cornstarch to remove the mucus on the fish body, wipe it off, and then rinse it with water. This method is more complicated, but it can most effectively preserve the freshness of the fish meat and the smoothness of the fish skin.

Specific methods for cleaning and removing fishy smell after buying eels:

1. After buying the eel, pour it into a basin and clean the blood on the surface with clean water first.

2. Pour out the water, prepare some salt, sprinkle it on the eel, and then start rubbing it. This will completely remove the mucus on the surface of the eel.

3. When you see abundant foam, wash it thoroughly with clean water (it is best to use running water while rubbing), and it is best to wash it several times.

4. When the water becomes clear, drain the excess water in the basin, sprinkle with white pepper and cooking wine to marinate and remove the fishy smell.
