1. There are many ways to peel the dried lotus seeds. The simplest way is to put 2000 grams of water in a pot and heat it to a boil. Then add 25 to 30 grams of pure alkali. After the pure alkali is completely dissolved, put the prepared dried lotus seeds into the pot, cook for one minute and turn off the heat directly. Cover the pot at this time.

2. Open the pot lid after five minutes, prepare a hard broom or brush, and rub the lotus seeds in the pot continuously. At this time, under the action of high temperature and alkali, the skin of the lotus seeds has softened and loosened, and will fall off automatically during the friction process. After all the lotus seeds are peeled, take them out and rinse them with clean water.

3. When peeling the dried lotus seeds, you can soak them directly in clean water for no less than 24 hours. After soaking, the lotus seeds will swell and their skin will soften. Now take them out and gently peel them with your hands, and the outer shell can be removed.

4. After removing the outer skin of the lotus seeds, there is still a thin layer of red skin inside. This thin skin must also be removed before eating. When removing it, you can put clean water in the pot, heat it, and then put the lotus seeds into the pot and cook for a while. After cooking, take them out and soak them in cold water. Under the effect of thermal expansion and contraction, the lotus seeds and the red skin will naturally peel off. Remove the red skin directly with your hands, and you will get the white and plump lotus seeds.

5. Dried lotus seeds cannot be eaten directly after peeling. The lotus core in the middle must also be removed. Otherwise, the lotus seeds will have a bitter taste after being cooked, which will make the taste worse. But don't throw away the lotus core. Collect it and soak it in water to drink, which can clear away heat, detoxify and prevent getting angry.
