Can I use an induction cooker to stew a casserole?

Now induction cookers have entered every household, and many families have replaced natural gas with induction cookers. However, the utensils that can be used on the induction cooker are limited, and the heat is also limited. There are some dishes that require a high heat or use special utensils, which cannot be completed by the induction cooker. For example, a casserole. Ordinary casseroles cannot be cooked in an induction cooker. So does that mean that if you only have an induction cooker at home, you can’t enjoy all the dishes cooked in casseroles? No, now there are casseroles specially made for induction cookers!

Why can't ordinary casserole be used in induction cooker?

Unlike other stoves, the induction cooker itself does not generate heat. Inside it is a wire reel. One end of the wire reel is connected to a 300V DC power supply, and the other end returns to the negative pole through the IGBT tube. When the IGBT tube is turned on and off at a very high frequency, there will be a constantly changing current (pulse) in the wire reel. Due to the magnetic effect of the current, the rapidly changing current in the wire reel generates a rapidly changing magnetic field above the wire reel. When an object that is both conductive and magnetic (such as iron) is placed in this electromagnetic field, the changing magnetic field generates current in the iron plate, which is eddy current. Eddy currents flow continuously in the iron plate, thus generating heat.

The casserole itself is an inorganic non-metallic material. It is neither conductive nor magnetic, and cannot generate eddy currents. Therefore, it cannot be used on an induction cooker. Special casserole pots have ferromagnetic materials installed at the bottom of the casserole, which absorbs the energy of the electromagnetic field to generate heat and transfer it to the casserole, so it can be used.

If you really want to eat casserole, go buy a casserole specially made for induction cookers. In the cold winter, you can also stew a casserole of rock sugar pork knuckles. In the hot summer, you can also stew a casserole of rock sugar, wolfberry, lotus seeds and white fungus soup. In the spring, you can also stew a casserole of mushroom and crucian carp soup. In the autumn, you can also stew a casserole of rock sugar, snow pear and bird's nest soup. In short, a casserole can give you the most gentle care in all four seasons.
