How to peel old water chestnuts?

When peeling water chestnuts, the peeling methods for raw water chestnuts and cooked water chestnuts are different:

1. Angular peeling method

① Wash the raw water chestnuts with clean water, then use a knife to cut off the bottom and both sides of the water chestnuts to the extent that you can see the tender flesh of the water chestnuts, but do not cut too much to avoid cutting too much of the water chestnut meat. Then place both hands on the two corners of the water chestnut and break it apart with force. At the same time, apply force with your thumbs on the concave part of the water chestnut. This way, the shell and the flesh of the water chestnut can be separated without destroying the shape.

② Wash the raw water chestnuts, place them on the chopping board with their belly facing upwards. Use a knife to cut along the longer diagonal of the water chestnut to divide it into two halves. Then push the shell of the water chestnut towards the flesh and turn the shell outwards. The snow-white flesh will come out. This peeling method makes the water chestnut look like a gold ingot, which is very pleasing and cute.

2. How to peel cooked water chestnuts

① When boiling water chestnuts, you can first boil them until they are 70% cooked, then rinse them with cold boiled water, dry them, and then boil them again. This will make it much easier to peel the cooked water chestnuts.

② Cut off the two corners of the cooked water chestnut with a knife, then cut it in half along the center line, and then use chopsticks to push from one end of one of the corners to the other end. In this way, the tender and delicious water chestnut meat will come out. You can peel many cooked water chestnuts at one time and enjoy them together.

③ You can bite off the belly of the ripe water chestnut or cut it off with a knife, and then bite off the two corners of the water chestnut. After these two steps, most of the meat of the water chestnut will come out. Finally, just push the water chestnut in the direction of the bitten-off belly, and the meat will come out.
