How to make spicy and sour kelp slices

Many people have eaten kelp, which is rich in iodine. There are many ways to eat kelp in life, in addition to the lighter stewed kelp. You can also make kelp into spicy and sour kelp slices, which is also a very good choice to eat with rice. There are many ways to prepare spicy and sour kelp slices, and people can also add different ingredients and condiments according to their personal preferences.

1. Method 1

Cut the kelp slices into cubes, blanch them in water, drain the water, and let them cool. Slice the garlic and cut the chili pepper into small sections. Mix aged vinegar and oyster sauce in a 1:1 ratio into a sauce that is just big enough to cover the kelp cubes. Add sugar, salt, garlic slices and chili peppers. Add the kelp cubes, put them in a fresh-keeping box, refrigerate overnight and you can eat it.

Slice the kelp, blanch the kelp, and dry it! Cut the pepper into sections and slice the garlic! Add garlic, chili, salt, sugar, rice vinegar and light soy sauce (Vitamin B) and mix well. Refrigerate overnight!

Cut the kelp into shreds and soak it in cold water for more than half a day. (The kelp I bought was very salty and was soaked overnight) Bring the hot water in the pot to a boil, then turn off the heat. Pour in the washed kelp shreds and mix quickly. Pour out and rinse with cold water, drain and set aside. (Blanching can remove some of the fishy smell of kelp. The kelp should not be put into the pot for more than 30 seconds. Blanching for too long will affect the taste of the kelp. If you want the kelp to be chewier, you can prepare ice-cold boiled water in advance, and then rinse it with ice water after blanching.) Add light soy sauce, a little cooking wine, vinegar, chili oil, sugar, and minced garlic and mix well. (Kelp itself is salty, so add salt according to your taste. Adjust the acidity and spiciness according to your own taste.) Soak the mixed kelp shreds in the soup for half a day to make them more flavorful.
