Raw materials

【Main ingredients】

500 grams of fine flour.

【Accessories】

150 grams of white sugar, 10 grams of baking powder, a little green and red silk, and an appropriate amount of yeast.

Process

First pour 350 grams of flour into a basin, add yeast, and mix with 170 grams of water (water temperature: hot in winter, cool in summer, warm in spring and autumn). Put it in a warm place to ferment for 12 hours to become old leavened dough. Then add the alkali and white sugar and knead it until smooth and evenly mixed. The remaining 150 grams of flour is used as a dough, mixed into the dough, and then the baking powder is kneaded into the dough. It must be kneaded evenly, and then placed on the chopping board for 20 minutes, rolled into long strips, pinched into dough pieces, and placed them with the ends facing up on a dry cage cloth. Sprinkle a little green and red silk powder on the top of the bun, and steam it in a steamer over high heat for about 15 minutes.

Ingredients: Flour

Accessories: spinach juice, carrot puree

Seasoning: sugar, alkali flour

Preparation method:

1. Take out the fermented dough, add sugar and alkaline flour (2.5 alkaline flour for one pound of flour) and knead evenly. Divide the kneaded dough into three pieces, take two pieces and add spinach juice and carrot puree to knead into green and red dough respectively;

2. Knead the three pieces of dough into long strips, stack them up and knead them into a single strip. Pinch them into small pieces and steam them over high heat for 20 minutes after the steamer starts to come on.

Precautions
