3. Shiitake mushrooms Shiitake mushrooms are a common edible fungus, rich in B vitamins and various minerals, and have a good preventive effect on breast cancer.
A substance called lentinan can be isolated from shiitake mushrooms. It has many functions such as anti-virus, anti-tumor, and enhancing human immunity. It has been widely used in the auxiliary treatment of cancers such as breast cancer, gastric cancer, and colon cancer.
When eating shiitake mushrooms, do not soak or wash them excessively to avoid the loss of a large amount of water-soluble nutrients. Shiitake mushrooms should be exposed to the sun before soaking to increase their vitamin D content and enhance the body's absorption of calcium.
