If cucumbers are stored in the refrigerator for a long time, they will suffer from frostbite - they will turn black, become soft, and change their taste. Cucumbers will also grow hairy and sticky. Because the storage temperature in the refrigerator is generally around 4℃ to 6℃, while the suitable storage temperature for cucumbers is 10℃ to 12℃, and that for green peppers is 7℃ to 8℃, they are not suitable for long-term storage. The suitable storage temperature for cucumbers, eggplants, tomatoes, etc. is between 7.2℃ and 10℃.

When chocolate is taken out of the refrigerator, white frost will easily appear on the surface, which will not only lose its original mellow taste but also facilitate the reproduction of bacteria. The best temperature for storing chocolate is 5℃-18℃. When the room temperature is too high in summer, you can first seal it with a plastic bag and then store it in the refrigerator. When taking it out, do not open it immediately, let it slowly return to room temperature before eating.

During the baking process of bread, the starch straight chain fraction in the flour has aged, which is why the bread has an elastic and soft structure. As the bread is stored for longer time, the straight chain part of the amylopectin in the bread slowly associates, causing the soft bread to gradually become hard. This phenomenon is called "staling". The speed of "staling" is related to temperature. At low temperatures (above freezing point), bread ages faster, and when placed in the refrigerator, it hardens even faster.

Fish should not be stored in the refrigerator for too long. The refrigeration temperature of a household refrigerator is generally -15℃, and the best refrigerator can only reach -20℃. When the storage temperature of aquatic products, especially fish, does not reach below -30℃, the fish tissue will become dehydrated or undergo other changes. For example, if crucian carp is refrigerated for a long time, it is easy for the fish to become rancid and the meat quality will change, making it inedible. Therefore, fish should not be stored in the refrigerator for too long.

Mooncakes are baked pastries made from ingredients such as flour, oil, sugar and nuts. Baked goods should not be stored in the refrigerator. Although for some varieties of mooncakes, putting them in the refrigerator can extend their shelf life, it will still affect their flavor. This is because the starch in the mooncake raw materials matures and becomes soft after baking. Under low temperature conditions, the mature starch will release water and become aged (that is, "regenerated"), making the mooncake hard and the taste worse.



There are six taboos for storing and freezing food:

1. Hot food must never be placed in a running refrigerator.

2. When storing food, do not store it too full or too tight. Leave some space to facilitate cold air convection, reduce the load on the unit, extend its service life and save electricity.



3. Raw and cooked food should not be mixed together to maintain hygiene.

4. According to the food storage time and temperature requirements, make rational use of the space inside the box. Do not place food directly on the surface of the evaporator. Place it in a container to prevent it from freezing on the evaporator and making it inconvenient to take out.



5. Fresh fish, meat and other foods cannot be put into the refrigerator without being processed. Fresh fish and meat should be wrapped in plastic bags and stored in the freezer. Vegetables and fruits should be wiped dry of moisture on the outer surface, placed at the bottom of the box, and stored at a temperature above zero.

6. Do not put bottled liquid beverages into the freezer to avoid cracking the bottles. It should be placed in a refrigerator or on a door shelf, and it is best stored at a temperature of around 4°C. Refrigerators that store food should not also store chemicals.

It turns out that there are these taboos when storing food in the refrigerator. We cannot just put food in a mess for the sake of temporary convenience.
