Ingredients for the dough: 250g flour, 1 teaspoon (5g) baking powder, 1/2 teaspoon (3g) salt, 3 tablespoons (45ml) olive oil, 100ml water, Ingredients for the filling: 400g cod (cut into 2cm pieces), 800g spinach, 6 tablespoons (90g) breadcrumbs, 1/2 teaspoon (3g) lemon juice, 180ml light cream, 2 eggs, 1/2 onion (chopped), 1 clove of garlic (chopped), 1 teaspoon (5g) thyme, 1/2 teaspoon (3g) salt, 1/3 teaspoon (2g) white pepper

Noodle recipe:

Put all the ingredients into a bowl and mix well to form a smooth dough.

Wrap the dough and place it in a relatively warm place (such as: next to the stove or heater) for 30 minutes.

Roll the fermented dough into a sheet with a diameter of 28 cm and place it in a larger baking pan for later use.

Filling method:

Blanch the spinach in boiling water, take it out and drain. Marinate the cod with lemon juice, then mix it with the spinach and set aside.

Sprinkle bread crumbs (4 tablespoons, 60g) evenly on the rolled dough, and top with spinach and cod pieces.

Beat eggs in a bowl. Put the heavy cream, egg liquid, chopped onion, chopped garlic and thyme in a bowl and mix well. Add salt and white pepper and pour over the dough.

Finally, sprinkle the remaining breadcrumbs (2 tablespoons, 30g) on ​​top.

For baking:

Preheat the oven to 200 degrees and bake in the oven for 25 minutes.
