How to preserve green onions in winter?

Many families like to buy a lot of green onions in winter, not only to store them, but also to prepare for the New Year. The weather is relatively cold in winter, and as the price of green onions becomes more and more expensive, it is time to prepare some green onions. However, green onions are easy to dry out after being stored for a long time, so we need some methods to store green onions. So how to preserve green onions in winter?

(1) Storage by racking: In the open air, in a shed or indoors, use wooden poles or steel to build a storage rack. Bundle the harvested and dried green onions into bundles of 7 to 10 kilograms and stack them on the racks, leaving gaps in between for ventilation and to prevent rotting. For outdoor storage, cover with plastic film to prevent rain and snow. During storage, the bundles should be opened and checked regularly, and plants that have heated up and deteriorated should be removed in time.

(2) Ground storage method: Spread 3 to 4 cm thick sand on the flat ground in the leeward area, and place the dried and bundled green onions densely on the sand with the roots facing downward, with a width of 1 to 1.5 meters. After stacking, build up 15 cm high sandy soil around the roots of the green onions. Cover with straw mats and plastic film to prevent rain.

(3) Trench hiding method: dig a shallow trench 20 to 30 cm deep and 50 to 70 cm wide in a cool and ventilated place. Bundle the selected and dried green onions into bundles weighing about 10 kg. After the ditch is filled with enough water, plant the green onions in bundles, cover the white part of the scallions with soil, and surround them with corn stalks to facilitate ventilation and heat dissipation. Before the temperature drops, cover with straw mats or corn stalks.

(4) Cellar storage method: After harvesting, dry the green onions for several days, then bundle them into bundles of about 10 kg and place them upright in a dry, sunny and rain-proof place to dry. When the temperature drops below 0℃, store it in a cellar. Keep the temperature in the cellar at 0℃ and avoid heat and moisture.

(5) Cold storage method: Bundle green onions that are free of pests and damage into bundles of about 10 kg, put them into boxes or baskets, and store them in a cold storage. The temperature in the warehouse is maintained at 0~1℃ and the relative humidity is 80%~85%. During storage, regular inspections should be carried out and rotten and spoiled onions should be removed in time.

(6) Micro-frozen storage method: dig a shallow trench 10 to 20 cm deep and 1 to 2 m wide on the north side of the east-west wall. The dried green onions are bundled into 7-10 kg bundles and stored vertically in the ditch. In the early stage of storage, the top of the scallion bundle should be opened and turned over once a week to ensure that all the scallion leaves are dry. When the weather is cold and the white part of the scallions is slightly frozen, add soil to the scallions and cover the top with straw mats.

In winter, the temperature outside is several degrees below zero and the house is relatively dry, so at this time, green onions cannot do without water. If green onions lose water, they will not only become dry and hard, but also inedible. To preserve green onions in winter, we can usually put green onions in a relatively cold place. Make sure the cold place is cool and ventilated, or wrap the green onions with homemade plastic wrap to prevent moisture loss.
