Ordinary yams contain more water because they are grown in large quantities artificially. The texture of Huaishan yam is relatively fine and hard, so it is not easy to break. The density of Huaishan Yao is relatively high, so it feels a bit like holding a stone when you hold it.

Origin

This can be said to be the most fundamental reason that leads to the difference between the two. Huaishan is a medicine with extremely high medicinal value. In traditional Chinese medicine, it is called authentic medicinal material, which means it is a medicinal material produced from its place of origin. In my country, the origin of yam is near Jiangsu and Anhui, and only the ones produced there can be called yam. The ones produced in other places are what we commonly call yam, and their medicinal and nutritional value cannot be compared with the real yam.

The cut surface of ordinary yam will turn yellow after a while of being cut, but that of Huai yam will not. The milky white color of the cut can be maintained for a longer time. The skin of yam will become smooth after a simple scrubbing, while Huai yam needs to be cleaned more vigorously.

Ordinary yam needs a long time to be cooked before it can be eaten, and it cannot reach the effect of melting in the mouth, while Huai yam only needs six or seven minutes of cooking to achieve that feeling. So if the yam you bought home takes a long time to cook, it means that the yam is very ordinary.

How to distinguish Huaishan from Chinese Yam

At first glance: the iron stick yam is of average thickness, generally 1-2.5 cm in diameter (like an adult's thumb), the skin is slightly dark in color, and the rhizome has iron-red spots; if the diameter is too thick or the skin is too smooth, it means it is not authentic. The thick iron stick yam sold on the market is fake iron stick yam. After steaming, it is only floury but not powdery, and has a lot of water vapor.

Second weigh: The weight of a single piece of iron stick yam generally does not exceed 200 grams; if it is too heavy, it may not be authentic.

Three folds: When you break the iron stick yam, you can feel that its flesh is harder and more powdery, its cross-section is delicate, white or slightly ivory yellow, and has less mucus; ordinary yams are not only not so firm in texture, but also not powdery enough.

Fourth taste: Because the iron stick yam has less water content and rich sugar content, its juice is thicker. Therefore, the authentic iron stick yam can be steamed in a very short time (5-10 minutes). It tastes dry and sweet after being cooked. It feels "sweet and powdery" in the mouth, with a faint numbness. The fake iron stick yam takes a long time to be steamed and has a crispy taste.
