Nowadays, coffee has become a drink that many people can accept and like to drink. Even many people with busy work will choose to drink coffee to achieve a refreshing effect. Hand brewed coffee is a type of coffee that needs to be made by yourself. Of course, making hand-brewed coffee requires following certain steps. Next, I will introduce to you the steps of making first brew coffee!

1. Warm cup

Everyone knows that when coffee gets cold, the tannic acid in it will take effect and make the coffee very sour, so before we start brewing coffee we should first pour hot water into the coffee cup to warm it up.

2. Grinding beans

The coarseness of hand-brewed coffee should also be adjusted appropriately according to the characteristics of the coffee beans. The powder coarseness of deeply roasted coffee beans should be slightly coarser than that of medium-deep roasted beans. Specifically, the score for deeply roasted coffee beans such as charcoal roasted coffee is 4, while the score for medium-deep roasted beans such as Blue Mountain should be 3.5. If the bean powder is too coarse, the brewed coffee will not be strong enough. If it is too fine, the coffee will be bitter. There is also the issue of the amount of coffee beans. The amount of coffee beans in a cup is 12-14g, and the amount of 2 cups should be calculated using the formula: one cup - 2)X2. The amount of three cups or more is simple, 3 times 30g, 4 cups 40g, and so on.

3. Combined appliances

Hand-brewed coffee mainly consists of three parts: filter paper, filter cup and filter pot. If you are more particular, there should be an insulation stove under the filter pot to prevent the coffee from getting cold during brewing. The sizes of filter paper, filter cup and filter pot should match. For example: a filter paper for two people should be matched with a filter cup for two people.

4. Transfer soybean powder

Pour the ground soybean powder into the assembled filter paper, then tap the filter cup to compact the soybean powder and make the surface smooth. So that the powder can be evenly hydrated in the following steps.

5. Warming pot

Pour a small amount of hot water into the bottom pot, shake it a few times, and then pour it out. Then put the compacted bean powder on the bottom pot.

6. Steaming

The purpose of steaming is to bring out the aroma of the coffee and prepare for the second brewing. The water temperature for steaming should be 93 degrees. Pour water from the center of the bean powder and make 2-3 circles so that all the bean powder can absorb water evenly. It is best to drip 3-5 drops of water. After absorbing water, the bean powder will expand and change from its previous flat shape to an upward convex arc shape. At this time, you can smell the faint aroma of coffee powder. This step is one of the decisive factors in determining whether a cup of coffee is brewed successfully, and it is particularly important.

7. Brewing

After the steaming is over, place the teapot on a wet napkin to cool it down. After 25-30 seconds, when the water temperature drops to 89-91 degrees, you can start brewing. Generally speaking, the water temperature for brewing medium-roasted coffee beans (which we call inert beans) is 91 degrees. This water temperature can better extract the aroma of the coffee beans. For deeply roasted coffee beans (active beans), the brewing temperature is 89 degrees. This water temperature is enough to extract the aroma and bitterness of the coffee beans. If the water temperature is too low, it will seem a bit bland, and if the water temperature is too high, it will seem overcooked and extremely bitter. The water flow for brewing can be slightly thicker than that for steaming, but it must also be stable. The amount of coffee can be controlled by the number of circles and the speed of the water flow. No matter whether you are brewing one cup or three cups of coffee, the water only needs to flow from the center to the outside in a circle, and then flow back to the center from the outside circle, and collect the water at the center of the circle, and the brewing is over. During the brewing process, be sure to pay attention that the water does not hit the filter paper, otherwise the coffee will be very astringent. The amount of coffee brewed should generally be 0.5 more than the mark on the lower pot, otherwise the amount of coffee brewed will not be enough.

8. Cup

Before pouring the coffee into the cup, you should gently shake the coffee in the pot to fully mix the strength and taste of the coffee so that each cup has a uniform taste. Then pour out the water in the warm cup, pour the coffee into the cup, place the plate and serve the meal.
