How to deal with lamb kidneys

Whenever there is a big festival, such as Chinese New Year, people will kill pigs, cattle, sheep, and chickens to celebrate the festival. Mutton is a higher grade meat than pork. More nutritious and tastier than pork! Every part of a sheep's body is a treasure and can play its role. Mutton can be used to make dumplings, and the wool from mutton hotpot can be used to make clothes to keep warm. But there is an unshakable smell of sheep. What should you do with the lamb kidneys obtained after killing a sheep? Let’s learn.

Method 1 :

Saojin is also called Yaosao, which refers to the white part in the middle of the sheep kidney. It cannot be eaten and must be removed. Grab one end of the tendon and pull it out with all your strength to tear it off. Or use a knife to cut off the white part in the middle of the sheep kidney. Removing this part will greatly reduce the odor of the sheep kidney.

How to prepare lamb kidneys before cooking

Kidneys smell bad no matter what they are. Because kidneys are urinary organs, it is normal for them to have a strong urine smell. Lamb kidneys have a strong lamb smell, and if you don’t handle them properly, you won’t be able to eat them.

1. Cleaning

Rinse the fresh lamb kidneys in clean water. Rinse until no blood comes out.

2. Remove suet

Remove the fat around the lamb kidneys. There is usually a circle of sheep fat around the sheep kidneys. You can choose whether to keep it according to your personal taste, but it is generally recommended to remove it.

3. Remove the membrane

After removing the fat from the lamb kidneys, also remove the thin membrane on the lamb kidneys. Tear off along the edge.

4. Cut in half

Cut the lamb kidney in half lengthwise down the middle.

5. Remove the waist tendons

After cutting the lamb kidney, you can see the tenderloin in the middle, which must also be removed. Pull it out, or use a knife to remove the white part in the middle of the sheep kidney.

6. Slice/cut flowers

Cut the lamb kidney into slices or flowers according to your preference or the dish you want to make.

7. Remove fishy smell

(1) Soak in pepper water for 10-20 minutes.

(2) Alternatively, pour an appropriate amount of white vinegar and starch into clean water and mix evenly. Put the lamb kidneys in and soak until they turn white and swell. Remove from the water, rinse again and drain.

(3) Alternatively, you can add rice wine, shredded ginger, and salt and marinate for more than 20 minutes. If you want the lamb kidneys to be completely free of odor, the marinating time should not be too short, at least 15 minutes.

Method 2 :

Kidney has a strong smell when cooked, but if it is soaked in pepper water, the smell will be removed. The method is: soak a small amount of peppercorns in boiling water for 10 minutes, then take out the peppercorns, wait for the water to cool down and put the reformed kidneys in to soak, then wash them. There will be no peculiar smell when cooking, and no blood will overflow, and it can also maintain its fresh and tender characteristics. How to remove the smell of mutton: If there is a smell of mutton when cooking, adding a little orange peel and a little radish during cooking can remove the smell and make the taste more delicious. Method to remove fishy smell without meat: When cooking rabbit meat, soak it in clean water to remove the fishy smell. Rabbit meat (especially wild rabbit) has a strong earthy smell. Removing the odor can better highlight the special aromatic flavor of rabbit meat.
