As the name suggests, pig kidneys are pig kidneys. They are a very popular tonic on the market. Liquor removal method Step 1 : Stand the pork kidney up, cut along the white meridians, and cut the pork kidney into two halves lengthwise. All white veins must be removed and the pig kidneys must be kept as intact as possible. Meridians cannot be eaten and should be thrown away. Pour white wine into a small bowl and repeatedly squeeze and wash the pig kidneys with your hands so that the wine can quickly penetrate into the pig kidneys. Special note : The ratio of adding liquor is generally one pork kidney to one bottle of liquor. 2. Pepper removal method Step 1 : Boil half a pot of water on the fire. After the pot boils, add three teaspoons of peppercorns to the water and cook for three minutes. Turn off the heat after three minutes, pour the pepper water into a bowl and let it cool, then pour the cooled pepper water on the pork kidneys and soak them for five minutes. Don’t forget to remove all the meridians as well! 3. Rice wine removal method Put the cut kidneys into a bowl, take a little green onion and ginger, wash them, tap them with a knife and put them in, then drop in rice wine until they are submerged. After about 20 minutes, use clean gauze to drain the rice wine, and remove the scallion, ginger, and kidney to get rid of the fishy smell. But it is better to drain it. In summer, you can put it in the refrigerator for later use. 4. Method 4 (1) The white and dark red parts of the pig kidney must be completely removed. This is the most critical step in removing the fishy smell of the pig kidney. (2) Soak the pork kidney in scallion, ginger and pepper water or knead the pork kidney in the scallion, ginger and pepper water, and change the water several times until the water is no longer turbid to remove the blood in the pork kidney. (3) Kneading the pork loin with starch and rinsing it with running water can better remove the blood from the pork loin. The pork loin treated in this way has a better taste and color. |
