The easiest way to make wine at home

The production process of wine is made through plant fermentation. Plants such as wheat and grapes will produce ethanol after a long period of fermentation, so people often use these things to make wine. The ancients said that the longer the wine is stored, the mellower its taste will be. This is because as time goes by, the concentration of ethanol will become higher and higher, and the wine will smell more and more fragrant. Now let’s learn the simplest method of home brewing.

The first step of liquor brewing: crushing

The purpose of crushing the raw materials is to facilitate cooking and make full use of the starch.

The second step of liquor brewing: ingredients

The purpose of batching is to combine new materials, distiller's grains, auxiliary materials and water to lay the foundation for saccharification and fermentation.

The third step of liquor brewing: steaming

The main method is to use steaming to gelatinize starch.

The fourth step of liquor brewing: cooling and drying the residue

After cooking, the raw materials are gradually cooled by lifting or drying the residue to create an environment suitable for the growth of microorganisms.

The fifth step of liquor brewing: adding koji

After the previous step, you can add koji and yeast. The amount of koji depends on its saccharification power, which is generally 8-10% of the main ingredients of brewing. The amount of yeast is generally 4-6% of the total input amount (that is, 4-6% of the main ingredients are used to cultivate the yeast).

The sixth step of liquor brewing: entering the cellar

When entering the cellar, the temperature of the mash should be between 18 and 20°C (not exceeding 26°C in summer). The mash entering the cellar should not be pressed too tightly or too loose. Generally, it is appropriate to load about 630 to 640 kilograms of mash per cubic meter of volume. Cover the mash with a layer of bran, seal it with cellar mud, and then cover it with another layer of bran.

The seventh step of liquor brewing: distillation

We use wine distillation equipment to evaporate the alcohol, water, higher alcohols, acids and other effective ingredients in the mash into steam, and after cooling, we can get the original liquor.

Regarding equipment, there are a lot of home brewing equipment on the market now, but Jiuzhi.com recommends that you buy a complete set, which is more labor-saving and convenient. In addition, it is best to choose stainless steel equipment. Finally, you must choose a regular manufacturer so that the quality can be guaranteed.

It is certain that making your own wine will add fun to your life, but the key is to check the ingredients of the wine you brew yourself. It is safe and reliable, and we highly recommend that you try it yourself and experience the surprise and joy brought by the winemaking process.
