Pour clean water into the pot, pour in the cut edamame after it boils. After the water boils again, continue to cook for 30 seconds, then remove from the pot and immediately put into cold water. At this time, the temperature of the water will become high. Pour out the warm water and then pour in new clean water until the temperature of the edamame cools down completely. Take out the edamame, drain the water and pour it into a container, then pour in the whole bottle of marinade, cover with a lid (or plastic wrap), and refrigerate for 4 hours before eating. The taste will be stronger if it is refrigerated for more than 12 hours.

Boiled Peanuts

Ingredients: peanuts, salt, star anise, pepper, fennel

Use your hands to squeeze a hole in the peanuts so that they can have better flavor when cooking. Put peppercorns, star anise, fennel and bay leaves into a tea bag and seal it. Pour twice as much water as peanuts into the pot, put in the seasoning bag, pour in the peanuts, cover the lid, bring to a boil over high heat then turn to medium heat, continue to cook for 10 minutes then turn off the heat; sprinkle in salt, stir evenly, cover and simmer for 2 hours before eating, it tastes best.

Spicy Crayfish

Ingredients: crayfish, salt, soy sauce, onion, ginger, garlic, dried chili pepper, rice vinegar

After buying the crayfish, put them in a basin, rinse them with clean water twice, pour out the water, add 2 tablespoons of salt, and then pour in clean water to cover the crayfish, and soak for 1 hour for better cleaning. Cut the green onion into 1 cm long pieces, slice the garlic, and peel and slice the ginger. Pour clean water into the pot, bring to a boil over high heat, then add the crayfish. When the water boils again, blanch them for 2 minutes, then remove them and rinse off the foam with clean water. Pour oil into the pot, add onion, ginger and garlic, sauté until fragrant, then add peppercorns and dried chilies. Wash the fresh shrimps with clean water, drain thoroughly and set aside. Remove the lettuce leaves, but do not throw them away (you can eat them directly with sauce after washing, it tastes good and can also reduce heat), peel them and cut them into 5 mm thick slices. pot

Pour oil into a pot and heat over high heat. When the oil is 50% hot, add dried red chili peppers and Sichuan peppercorns. Reduce heat to low and stir-fry until the spicy flavor comes out. Then increase heat to high and fry green onions for about 20 seconds. Then add fresh shrimp and stir-fry. After the shrimp changes color, pour in the chopped lettuce slices, add light soy sauce, dark soy sauce, sugar and salt, mix well, continue to stir-fry on high heat for 2 minutes and then turn off the heat.
