River clams, also known as river clams, river clams, bird shells, Saogala (Shandong dialect), etc., belong to the family Mussels of the class Bivalvia of the phylum Mollusca and are a common shelled aquatic animal. River clams feed on algae by filtering them. Common species include the horn-backed toothless clam, the folded crown clam, the triangular sail clam, etc. They are produced in rivers and lakes in most parts of my country. The meat of river clams is particularly tender and delicious, making it a great dish for banquets. Which parts of the mussels should be removed:

The gills of river clams: Between the thin skirt and the thick clam meat, there are two pieces that half cover the clam meat, are crescent-shaped, soft, and have gill-like textures inside. To be removed.

Intestines: Next to the gills, tubular, filled with black mud and sand, one end connected to the clam body, pinched off. The other end is stuck to the columnar axe foot and can be torn off.

In addition, gently squeeze along the clam body towards the hole where the intestines were cut off to remove the remaining mud and sand.

Everything else is basically edible.

River mussels method:

2. Tips for removing clam meat: First, hold the clam tightly with your left hand, with the clam mouth facing upwards. Then use your right hand to hold a knife and pierce into the body from the water outlet of the clam, close to the shell wall on one side. The piercing depth should be about 1/3. Scrape off the shell muscle of the clam with force. Then pull out the knife and use the same method to scrape off the shell muscle at the other end. Open the clam shell and the clam meat can be taken out intact.
