The selection method should be based on observation. The best kernel is the one that is full, the second best is the one that is half-shrunken; the best color of the kernel is yellowish white, the second best is dark yellow, and the third best is brownish yellow. The appearance of oily kernels is a sign of spoilage. The best kernels are white and fresh, while kernels with oily "chrysanthemum hearts" are inferior. Kernels that are completely oily, sticky, dark brown, and have a rancid smell are seriously spoiled and cannot be eaten.

2. The hazelnut shells are brown, but most of the ones with good glossy surface have been smoked with sulfur to cover up some parts of poor quality. If you eat hazelnuts containing sulfur, your tongue will feel numb.

1. Fry the hazelnuts until cooked, but don't make them burn. Eat them at any time, remove the shell and chew the meat. Eat any amount. It can stimulate appetite, improve eyesight and increase physical strength.
