How to wash off the slime on black fish:

1. The black fish you buy from the market has usually already been slaughtered by the vendors, so the first step is to simply clean it, wash away the dirt and blood in the fish's belly, and remove the remaining scales on the black fish.

2. Place the cleaned black fish on the chopping board, and use a kitchen knife to scrape it repeatedly from head to tail, scraping each side for about 1 minute. The purpose of this is to initially remove most of the mucus.

3. When you wash the black fish after scraping it twice, you may find that there is much less mucus, but there is still a lot of mucus on the head and tail fin. Pour a bottle of boiling water into a stainless steel sink. The water temperature should be 80 degrees Celsius. Put the black fish into the water and blanch it slightly, then take it out. Use a kitchen knife to scrape both sides of the fish again. You will find that the originally black black fish becomes snow-white all over, and the disgusting mucus is gone. Rub the tail fin and head with your hands to remove the dirt.

4. Finally, cut the black fish into pieces and rinse it in cold water. This simple method can quickly remove all the mucus from the black fish, saving time and effort.
