How is red wine made

Foreign red wine and Chinese white wine are both popular among people at home and abroad. Chinese liquor is usually made from fermented rice. It has a spicy and stimulating taste, often with the aroma of rice, and a high alcohol content, making it suitable for men. Foreign red wine tastes sweet and sour with a aftertaste, has the effect of detoxifying and beautifying, is a very popular wine among women, and is also very easy to make. So how is red wine made?

1. Wash the grapes and soak them in light salt water for two hours (remove the rotten and fallen grapes). This is to remove the pesticides and other harmful substances on the grape skin. Grapes with damaged skin should not be used to make wine, because the salt water may seep into the flesh during soaking, affecting the quality of the wine.

2. Rinse again with clean water and drain the water;

3. Crush the dried grapes and put them into a container. The fermentation process takes about a week (18-25 degrees Celsius), depending on the local temperature. In high-temperature areas, it may take 2-3 days to complete. The fermentation is completed when all the grape skins float up and no bubbles are produced.

4. Stir and add sugar. Add the first sugar (5%-7% of the weight of the grapes) 24 hours after crushing, and add the second 5%-7% sugar on the 4th day. From the first sugar addition to the end of fermentation on the seventh day, stir once in the morning and afternoon every day, and stir the floating grape skins into the juice to ensure full fermentation.

5. When there are basically no more obvious bubbles in the bottle, you can prepare for filtration, which usually takes about 8 days; tie the gauze into a bag, then slowly pour the wine liquid into it, then wrap the remaining grape skins and seeds in the gauze, and squeeze the remaining juice into the wine liquid;

6. The wine is a little cloudy at this point, so seal it and let it stand (about a week);

7. After a week, add egg white and stir (one egg white for every 10 pounds of wine, stir the egg white vigorously for about 15 minutes until it becomes foamy). This can make the wine clearer. Let it stand for a while, and the wine can be drunk when it becomes clear.

Be sure to buy naturally ripened grapes in the summer when grapes are on the market in large quantities, and do not buy grapes grown in greenhouses out of season.
