The dipping sauce for dumplings is very simple. The dipping sauce for northern dumplings (or fried dumplings, steamed dumplings) is made with 2 parts of aged vinegar as the base sauce, 1 part of minced garlic, 1.5-2 parts of light soy sauce, and 1 part of fried chili pepper, mixed evenly. It tastes sour, fresh, and slightly spicy, and is very palatable. Southern dumplings have a wider variety and quantity of fillings, and the dumplings themselves are delicious enough, so the dipping sauce is very simple. Generally, it is made with bright red Zhejiang vinegar and a little chili sauce mixed evenly. It tastes sour, fresh, sweet, and spicy, and is only used to introduce flavor. The main flavor of the dumplings themselves is still the flavor of the dumplings.

1. Wash the peeled garlic and mash it into garlic paste in a garlic mortar, or cut it into minced garlic with a kitchen knife and put it in a bowl for later use.

2. Add a little aged vinegar, soy sauce, salt and MSG. To enhance the flavor, you can also add a little sugar.

3. Some people like to add condiments such as Wei Ji Xian when making dipping sauces. The taste is indeed delicious, but from personal experience, I am reluctant to use such condiments. I would rather use less MSG and a little sugar instead.

4. If you want to make the dipping sauce more delicious, you can add a few drops of sesame oil into the bowl to make it perfect.

5. Stir the prepared dipping sauce evenly with chopsticks and it is ready to eat. It should be noted that this method of making the dipping sauce is simple and applicable. Make it when eating dumplings. Don't make too much, just enough for one meal. It would be a pity to throw away what you can't finish, and it may go bad if you keep it for the next meal.

Note:

If the garlic is too spicy when pounding, you can add a little salt when pounding the garlic to make the garlic sauce fragrant but not spicy.
