Materials

Ingredients: 500g sunflower seeds (raw)

Seasoning: 15g salt, 3 star anise, 1 spoon of Sichuan pepper, 2 small pieces of cinnamon, 1 spoon of fennel, 4 slices of licorice

1. Put the melon seeds into a large colander and put it under the water pipe to rinse off the dust on it.

2. Then put it into the pot and add water. The melon seeds will float up with the water, so just press the melon seeds with a colander until the water covers them. Then add salt and stir well. After boiling, it is best to taste the water used to cook the melon seeds. It must be salty, otherwise the melon seeds will not taste good after cooking.

3. Put star anise, pepper, cumin, cinnamon and licorice directly into the pot or put them in a seasoning bag.

4. After the fire is high, simmer for 20 minutes on low heat, turn off the heat, soak until the water is completely cool, then use a colander to scoop out and drain the water for a while

5. Cut a square piece of gauze, fold it, and sew its bottom edge and the other side edge with needle and thread, then turn it over and turn the seam into the bag, and an open rectangular gauze pocket is ready.

6. Put the cooked melon seeds into the bag (fill it only 70% full, so that the bag can be spread out to facilitate the circulation of heat in the bag), tie the bag, and then lay the bag flat and evenly on the heater to dry. It takes about 3 days. It must be baked dry to taste good. Turn the bag over every day.

7. If there is no heating, you can put the cooked melon seeds in a wok and fry them until they are dry; you can also spread them out on a baking tray and bake them at 100 degrees until they are dry, which takes about an hour.
