The flavonoids such as quercetin rich in buckwheat bioflavonoids are a light shielding substance that has the function of absorbing ultraviolet rays. It can protect biologically active substances such as ascorbic acid from oxidation and maintain their activity. It is an excellent antioxidant. Its chelation effect and gene expression have obvious functions in reducing fat oxidation and degeneration.
