If cooking oil is left for a long time, especially residual crude oil, which contains more plant residues, the oil may become rancid. Cooking oil contains a component called linoleic acid, which easily reacts chemically with oxygen in the air. This phenomenon is called "oil oxidation". A series of reactions such as oil and hydrolysis can generate small molecule aldehydes, ketones and carboxylic acids with special odors, oxides, peroxides and other decomposition products. Rancid smell is the result of oil oxidation and rancidity. When oil becomes rancid, it produces a lot of smoke and is choking when heated. It contains decomposition products such as glycidaldehyde, which can easily cause poisoning if consumed.

2. Toxic substances such as peroxides produced by spoiled oils and fats convert hemoglobin ferric iron into hemoglobin ferric iron. Its toxic effect causes hemoglobin to lose its oxygen-carrying function, causing the body to lack of oxygen and resulting in cyanosis of the mucous membranes and skin.

3. The oxides of rancid substances have a direct destructive effect on important enzyme systems such as succinate oxidase and cytochrome oxidase in the body's enzyme system, interfering with the tricarboxylic acid cycle and oxidative phosphorylation in the cells, causing disorders in intracellular energy metabolism, resulting in intracellular asphyxiation, and causing patients to suffer from acute respiratory and circulatory failure.

When it comes to expired cooking oil, don't take chances and think that it's okay if it's a few days past expiration. People are prone to poisoning if they eat expired oil, and various adverse reactions may occur, severe cases may even pose a threat to life.
