The International Agency for Research on Cancer once listed 94 compounds that are carcinogenic to experimental animals, 15 of which are polycyclic aromatic hydrocarbons. 3. Origin

Benzopyrene in the environment comes from waste gases generated by the combustion of coal, oil, natural gas, etc. in industrial production processes and daily life, including exhaust gas emitted by motor vehicles, rubber production, and tobacco smoke. Benzopyrene can enter foods such as vegetables, fruits, grains, aquatic products, and meat through pollution of water sources, atmosphere, and soil. In smoked, baked and fried foods, fats, cholesterol, proteins and carbohydrates will undergo thermal cracking reactions under high temperature conditions, and then undergo cyclization and polymerization reactions to form polycyclic aromatic hydrocarbons including benzopyrene.
