You'd better prepare a basin of hot water, hold the fish tail in your hand and scald it in the basin for a few times, and then scrape off the hard scales on the sturgeon with a knife. This makes me feel relieved. Then cut the fish into pieces, apply a little salt and marinate for a few minutes, steam for 5 minutes and turn off the heat, pour the white vinegar, sugar and steamed fish soy sauce sauce on them. It is best to taste the sauce first and pour it on if you think it tastes right. Sprinkle some shredded red dried pepper, a lot of shredded green onion, ginger and coriander, and finally drizzle with cooked oil. Basically all parts of sturgeon can be eaten, and its bones are all cartilage, so it is suitable for the elderly and children to eat without getting stuck in the throat. The tendon in the middle of the fish body is especially good.
