After soaking the rice, grind the rice and water into a thin rice paste for later use. Boil the fresh jelly grass and mash it, then put it into a gauze bag to squeeze out the gelatinous juice. After it solidifies, place it in cold water to accelerate cooling.

4. Hot jelly

The seasoning for hot jelly is quite different from that for jelly. Prepare the seasoning soup in advance, boil the osmanthus, Sichuan pepper, pepper, etc. with water, then add oil, salt and a small amount of dry powder and cook into a thin paste. When eating, no salt, sauce or vinegar is needed. Just pour red chili oil and seasoning soup into the hot jelly bowl. It has a nice flavor and good color, and is economical and affordable.
