​How to make homemade donkey-hide gelatin cake

1. Prepare the ingredients: 500 grams of donkey-hide gelatin, 500 grams of walnuts, 500 grams of red dates, 300 grams of wolfberries, 1000 milliliters of rice wine, 300 grams of rock sugar, and 300 grams of sesame seeds.

2. Crush the red dates, walnuts and donkey-hide gelatin into small pieces and set aside;

3. Soak the donkey-hide gelatin in rice wine for 24 hours in advance to dissolve the donkey-hide gelatin and allow the effective ingredients of the donkey-hide gelatin to be fully extracted;

4. Boil the soaked rice wine and donkey-hide gelatin over high heat, then add rock sugar and simmer over low heat, stirring while simmering, until it can stick to the chopsticks to make a hanging flag.

5. Pour the ingredients in step 1 into the pot, stir thoroughly, pour into a square mold, flatten, dry, and then cut into small pieces.

Note: Pregnant women should take alcohol-free formula. Diabetics cannot add red dates and rock sugar. Children under 6 years old cannot consume donkey-hide gelatin. People with spleen and stomach deficiency, phlegm-damp constitution, and damp-heat constitution should not eat donkey-hide gelatin.

2. Method 2

Ingredients: 250g Dong'e Ejiao, 250g walnut kernels, 250g black sesame seeds, 125g red dates, 50g raisins, 50g dried longans, 50g wolfberries

Accessories: 250g rock sugar powder, 375ml rice wine

Steps to make donkey-hide gelatin cake

1. Prepare all the ingredients and grind the donkey-hide gelatin into powder. If you don’t have a powder grinder, soak it with rice wine two or three days in advance.

2. Pour the rice wine and donkey-hide gelatin into a casserole, bring to a boil over high heat, then turn to medium-low heat until cooked until it is like a flag. This means that when you scoop up the donkey-hide gelatin with a spoon, it will slowly flow down in the shape of a flag in an inverted triangle.

3. Turn to medium-low heat, first pour in wolfberry, dried longan, and raisins and mix well, then pour in red dates, then walnut kernels, and finally sesame seeds. Ensure the order in which these auxiliary ingredients are put into the pot. Remember not to put the sesame seeds in first, otherwise it won’t be able to be stirred. Mix everything together as much as possible before adding the next thing;

4. Pour into the prepared baking tray, put a piece of plastic wrap on the bottom of the baking tray in advance, brush a layer of sesame oil on it, or use vegetable oil instead. After pouring, brush a layer of oil on the surface, cover with a layer of plastic wrap, and press it flat with your hands;

5. After cooling to room temperature, put it in the refrigerator for 2-3 hours. After it solidifies, take it out, remove the plastic wrap, and cut it into strips first;

6. Cut into small pieces and seal for storage.

Step 1

It is best to cut the red dates and walnuts into smaller pieces so that when you slice them, the whole piece will not be filled with red dates or walnuts.

Step 2

Soak the donkey-hide gelatin in rice wine for about 24 hours. The longer the better. (Soaking in rice wine for such a long time is to allow the efficacy of the donkey-hide gelatin to be fully exerted. Many unscrupulous merchants directly boil it, which actually greatly reduces the efficacy of the donkey-hide gelatin.)

Step 3

Bring to a boil over high heat. Add rock sugar and simmer on low heat until the crust is formed. (Note: Stir constantly with a spoon during the simmering process to prevent sticking to the pot) Simmer on low heat until the crust is formed (as shown in the picture). This step is particularly important for the production of donkey-hide gelatin cakes. It is related to whether the rice wine has fully evaporated. If this step is not done well, it will easily lead to a soft donkey-hide gelatin cake.

Step 4

After hanging the flag, pour the above ingredients into the pot and stir evenly. (Note: Do not add black sesame seeds at this time, otherwise stirring will be very difficult)

Step 5

Stirring is complete. Pour into a square mold. If you want osmanthus or rose. First lay it on the mold, pour it in, flatten it, and let it dry.

Step 6

Cut into strips of the same width, and then cut the strips into slices
