Be sure to wait until the water boils before adding the shrimp and cooking for ten minutes. Fresh shrimps themselves carry bacteria, so when cooking shrimps, add a small amount of water, about one-fourth of the shrimp's weight. When the water is fully boiled, put the shrimps into the pot. Wait until the shrimps turn completely red and cracks appear in the shell with some protruding flesh.

The shrimp head is a little difficult to handle, but we don’t eat the head, so I just cut off the head, which makes it easier to handle.

5. Prepare to cook. Put clean water in the pot, add some pepper and lemon slices, and add appropriate amount of salt and ginger slices. Mainly used to remove fishy smell.
