Mango Thousand Layer Cake Recipe Steps

First we need to make the Thousand Layers (I used these materials to make 20 layers), prepare the following materials: 100g low-gluten flour + 60g corn starch mixture 6 eggs beaten 50g white sugar + 500g pure milk mixture 20g butter melted in water 500g (2 boxes) pure milk

Beat the eggs and pour into the sugar and milk mixture and stir well.

Sift in the flour starch mixture twice and stir evenly (a small amount of flour will clump during stirring, which does not affect it)

Sift the mixed liquid in step 3 3 times (this is very important and will directly affect the quality of the Thousand Layer Wheat Peel. You can do it according to your own situation, but at least 3 times). The mixture after sifting becomes silky and delicate.

Add the melted butter to the sifted mixture and stir well.

Sift the butter mixture once more.

Heat the pan to 70%, pour a spoonful of thin lasagna liquid, turn the pan, wait for the lasagna to change color and curl up (about 2 minutes), and the first lasagna is done (the first lasagna is usually not ideal, it will get better and better later)

Similarly, place the fried pancakes flat on the plate one by one (to speed up the cooling, I put an ice pack under the plate to cool it down)

After all the lasagna is done, wrap it in plastic wrap and put it in the refrigerator for half an hour for later use.

While the lasagna crust is being refrigerated, we can prepare the cream and mango. The ingredients are as follows: 60g of white sugar, 500g of whipped cream (refrigerated for 4 hours in advance), 4 mangoes

Dice mango and set aside

Add sugar to the cream and whip it on low speed (2-3, if the amount of cream is small, you can use 1, be careful not to use high speed to cause water and oil separation) until it peaks and is ready for use. Cream is very delicate, so I put an ice bag under the cream basin to cool it down.

Take out the refrigerated lasagna, apply a layer of butter on each layer of the dough, leaving about 1 cm on the edge of the dough without applying butter, add a layer of mango butter on every five layers of dough, and mix them, and so on.

After all the crepe cakes are stacked, put them in the refrigerator for 2 hours or more and you can enjoy the delicious mango crepe cake (I personally like the taste of refrigerating it for a little longer)

Tips

1. The liquid for making the Thousand Layer Skin must be sieved to ensure the quality of the crust.

2. After frying the dough, be sure to spread it out flat on a plate, otherwise when the dough cools down, it will be fixed and difficult to spread flat again. Putting it in the refrigerator is also to set the crust and allow the oil to be absorbed into the crust, making it easier to operate later. Overheated crust is difficult to apply butter (the butter will melt).

3. Before whipping the cream, the cream must be refrigerated for more than 4 hours. The temperature determines the quality of the whipped cream. Use a low setting (I use setting 2-3) to whip the cream until peaks form. Whipping too quickly or at too high a temperature will cause the butter to separate from the water and oil.

4. [How to solve the problem of water-oil separation in cream] Pour the separated water into another water-free and oil-free bowl, leaving only a little in the original cream pot. Turn the whisk to level 1 and beat in circles. You will slowly find that the water and oil are mixing together. Then slowly add the water you just poured out in several times and continue beating to restore it to its original state.
