Can moldy food induce liver cancer? How to prevent liver cancer?

Nowadays, most people know that liver cancer is a serious tumor disease with a very high mortality rate, and they are very afraid of getting this disease. However, they do not know what causes liver cancer, so they do not know how to prevent it. If you want to prevent the occurrence of the disease, you must understand the factors related to the disease, especially for liver cancer, you must do a better job of preventing it. So let's take a look at some common knowledge about liver cancer from the following examples:

The occurrence of liver cancer is closely related to aflatoxin

In 1960, 100,000 turkeys in the UK suddenly died within a few months. Investigations found that the feed contained peanut powder imported from Brazil. Further investigations found that Brazilian peanuts were contaminated with mold containing aflatoxin. This incident made people realize the carcinogenic effect of aflatoxin.

In my country, liver cancer high-incidence areas (such as Qidong, Jiangsu, and Fusui, Guangxi) have been found to have serious aflatoxin contamination in local food; and in Africa, liver cancer high-incidence areas (such as Uganda), investigations have found that local food (such as corn, etc.) is contaminated with aflatoxin. Therefore, epidemiological research evidence shows that aflatoxin contamination in food is closely related to the occurrence of liver cancer.

Scientists in my country have successfully induced liver cancer in rats by feeding them moldy peanuts and corn, which further proves that moldy food can induce liver cancer. The corn, soybeans, peanuts, etc. we eat are easily contaminated by aflatoxin. Long-term consumption of foods containing this toxin is prone to liver cancer.

Aflatoxin contamination of food can occur in multiple links during harvesting, storage and processing. Therefore, the management of these links should be strengthened, such as the storage environment should be dry and ventilated, and the storage time should not be too long. If aflatoxin contamination or mildew is found in food, it should not be eaten.

Four foods to prevent liver cancer

1. Eat carrots and citrus

The protective effect of vegetables and fruits on the liver is produced by the interaction between the vitamins, minerals, fiber, etc. in them. Green leafy vegetables, carrots, potatoes and citrus fruits have the strongest preventive effect. Dr. Dong Jing recommends,

You should eat five or more kinds of fruits and vegetables every day, including a glass of juice in the morning, a piece of fruit in the morning and afternoon, and two or more servings of vegetables at dinner. The total daily intake is about 400-800 grams, which can reduce your risk of liver cancer by 20%.

2. Drink Tieguanyin

People in southern Fujian love to drink tea. Dr. Dong said that it is very beneficial for preventing liver cancer. Tieguanyin, which is common in southern Fujian, is the best, and Longjing before the rain is also good.

3. Eat dairy products

Medical research has shown that if you consume dairy products, including milk and yogurt, every day while controlling your alcohol intake, your risk of liver cancer will be reduced by 78%. Currently, children have developed the habit of consuming dairy products, but only a few adults do, so this may be improved.

4. Eat more “three bamboo shoots”

The three shoots are bamboo shoots, lettuce and asparagus. Experts suggest that eating more of these three foods on a daily basis can reduce the incidence of liver cancer, and they are also delicious.

Four Foods Not to Eat to Prevent Liver Cancer

1. Do not eat moldy food

In spring, food is prone to mold. Aflatoxin in moldy food is a liver cancer-causing substance, which takes only 24 weeks to cause cancer. Therefore, food should be properly stored and discarded immediately once it is moldy, especially soybeans, peanuts, sweet potatoes, sugar cane, etc.

Do not eat it again. In addition, peanut oil should not be stored for a long time. If it is found to have a rancid smell, it should not be eaten. Otherwise, it will not only taste bad, but more importantly, it will cause cancer.

2. Do not eat or eat less pickled vegetables

Pickled vegetables such as sauerkraut, pickles, and salted fish are refreshing and appetizing. As the weather gets hotter, people lose their appetite and prefer to eat pickled vegetables with rice. However, pickled vegetables contain a large amount of nitrosamines, which have been shown to be related to the occurrence of liver cancer. It is best not to eat them or eat less. And remember, you must pickle them thoroughly before eating.

3. Do not drink or drink less alcohol

Long-term drinking will cause the alcohol to digest the gastric mucosa. Once the gastric cells are damaged, the toxic substances in the food will be easily absorbed by the stomach, which can easily cause alcoholic hepatitis, damage the liver's detoxification function, and even cause alcoholic cirrhosis.

This is a risk factor for liver cancer. If you drink moldy peanuts with alcohol, the possibility of inducing liver cancer will be greater. Dr. Dong recommends that adult men should not drink more than 2 cups of alcohol per day, and women should not drink more than 1 cup.

4. Animal and vegetable oils should not be eaten after they have gone bad

Stale oils all contain the chemical component malondialdehyde, which can generate polymers and react with proteins and deoxyribonucleic acid in the human body, causing the protein structure to mutate, causing the cells with mutated proteins to lose their normal functions and transform into early cancer cells. In addition, malondialdehyde polymers can hinder

The replication of DNA accelerates the aging process. Therefore, animal and vegetable oils should not be stored for too long. Oils that have deteriorated and have a rancid smell are not suitable for consumption. Foods fried with rancid oil not only taste bad, but more importantly, can cause cancer and shorten life expectancy.
