What foods can you eat to stay away from liver cancer? The seven main culprits of liver cancer

On October 23, at 5:30 pm, Da and Xiao S's father Xu Jian died of liver cancer in Taipei. Before his death, both daughters were by his side. For a while, liver cancer attracted widespread public attention. How does liver cancer come about? How can we prevent liver cancer in our daily lives?

Seven major culprits causing liver cancer

1. Eating food contaminated by Aspergillus flavus

More than 30 years ago, a farm in the UK fed turkeys with peanut cake that was moldy due to Aspergillus flavus, which caused the death of 100,000 chicks. Epidemiological studies have shown that the geographical distribution of liver cancer in my country is basically consistent with the distribution of aflatoxin contamination. In areas where grain, oil and food are seriously contaminated by aflatoxin B1, the incidence and mortality of liver cancer are also high.

Aflatoxin is a carcinogen that grows and reproduces in hot and humid environments. If humans eat moldy grains for a long time in the summer, they will be infected with aflatoxin and liver cancer will occur.

2. Drinking water is unhealthy

Water is an important substance for maintaining the normal survival of human organisms. Water itself certainly does not cause tumors, but epidemiological surveys have shown that the degree of drinking water pollution is positively correlated with the incidence of liver cancer. This undoubtedly indicates that there are carcinogens in the water source, and it may be the combined effect of multiple carcinogens, such as humic acid, blue-green algae toxins, etc.

3. Long-term alcoholism

Long-term alcohol abuse can significantly damage liver cells and lead to malnutrition, making the liver prone to cirrhosis, which can develop into liver cancer. Of course, in addition to the above dietary factors, hepatitis B, parasitic diseases in the liver (such as Clonorchis sinensis), and genetic susceptibility are also closely related to the occurrence of liver cancer. It should be pointed out here that when the above two factors come into play, liver cancer is more likely to occur, such as hepatitis B and aflatoxin exposure, which will cause the disease faster.

Alcohol poisoning can also cause alcoholic fatty liver, alcoholic hepatitis, and alcoholic cirrhosis. In alcoholic hepatitis or cirrhosis, the number of Kupffer cells decreases, which can increase the occurrence of liver cell cancer.

4. Excessive intake of nitrosamine compounds

Dimethylnitrosamine has been isolated from the food of residents in South Africa, a high-risk area for liver cancer. This type of compound can also cause other tumors such as esophageal cancer. Therefore, nitrosamine compounds are also classified as one of the causes of liver cancer.

5. Intake of too little trace elements

Current research on the relationship between trace elements and liver cancer has found that the mortality rate from liver cancer is negatively correlated with the selenium content in the environment and with the blood selenium level of residents. Animal experiments have shown that selenium can block aflatoxin-induced liver cancer in rats and ducks.

6. Complex factors

Overnutrition (macronutrients) or nutritional deficiency (such as vitamin A, B1 deficiency), hemochromatosis, parasitic infection and heredity are also risk factors for liver cancer.

7. Gene mutation

Mutagens and viruses in the environment stimulate the activation of liver cell division response pathways, causing point mutations and gene translocations in cells, which are possible factors that accelerate the proliferation of cancer cells.

Eat more three kinds of bamboo shoots to avoid liver cancer

We all know that alcoholism can easily lead to liver cancer, but do you know what foods can prevent liver cancer? Here we recommend three common foods - bamboo shoots, lettuce and asparagus. Eating more of these three foods on a daily basis can reduce the incidence of liver cancer, and they are also delicious.

1. Bamboo shoots: laxative and detoxifying

Bamboo shoots as a dietary therapy can have a laxative effect. The E. coli in the intestines can synthesize the bamboo shoot cellulose into vitamins needed by the human body. It can also synthesize complex waste products that cannot be absorbed and excreted from the body with bile acid, a product of cholesterol metabolites in the intestines.

Diet therapy recommendation:

Use 60 grams each of oyster mushroom and hericium erinaceus, 200 grams each of lean pork or black chicken, add 600 grams of bamboo shoots cut into slices, stir-fry with vegetable oil or stew over low heat. Regular consumption can prevent digestive tract tumors and liver cancer. People with severe gastric bleeding and esophageal varices should eat bamboo shoots with caution.

2. Lettuce: Increase appetite and prevent anemia

Lettuce leaves are rich in calcium, carotene and vitamin C, and lettuce can promote the secretion of gastric juice, digestive enzymes and bile, which helps hepatitis B, hepatitis C virus carriers and patients with chronic liver disease to increase appetite. People with cirrhosis and anemia often eat lettuce, which can promote the secretion of organic acids and enzymes, increase iron absorption, help platelets rise and recover, and prevent the disease from worsening.

Diet therapy recommendation:

Peel the lettuce, slice it and stir-fry it. It is crispy and delicious.

3. Asparagus: Reduces fatigue

Asparagus contains nucleic acids, folic acid, glutathione, choline, arginine, mannan, peptidase rutin, etc., which can effectively inhibit the growth of cancer cells. Asparagus can also be used as a nutritional supplement for liver cancer patients to relieve fatigue and increase appetite.

Diet therapy recommendation:

Cook fresh asparagus and eat it cold, once in the morning or before going to bed. You can also use 5 to 10 grams of asparagus roots per day, boil them in water and drink them instead of tea. One course of treatment is 3 months, and you cannot interrupt it.
