Because broad beans contain protease inhibitors and hemagglutinins, which are substances that are very harmful to the human body, they can be inactivated after soaking and blanching in water. Therefore, broad beans should be soaked or blanched multiple times before cooking.

Dietary taboos of broad beans

The fresh broad beans in spring are tender green, fragrant and delicious, but some people experience abdominal pain, yellowing of the skin and sclera after eating fresh broad beans. This is commonly known as "favism."

The cause of "favism" is that some people suffer from "hereditary red blood cell deficiency disease". After eating fresh broad beans or inhaling broad bean pollen, the toxic substances in them can cause the red blood cells in the body to be oxidized and destroyed, resulting in hemolytic lesions. The disease has an acute onset, initially with chills, fever and even unlocalized abdominal pain, followed by vomiting and pale complexion. In severe cases, there is obvious jaundice, oliguria or anuria, and even shock and renal failure.

Although "favism" is very harmful, it can be prevented. You will not be infected with "favism" if you do not eat broad beans raw (especially fresh broad beans), do not eat broad beans in large quantities at one time, or eat broad beans continuously. Patients or people with a family history of "hereditary red blood cell deficiency" should avoid eating raw or cooked broad beans.
