How to make the dough for sesame cakes

1. Sesame biscuits

Ingredients: 600g wheat flour

Accessories: 15g yeast, 100g sesame seeds

Seasoning: 10g salt, 25g rock sugar, 2g pepper, 1g fennel seeds, 60g sesame paste, 1g alkali, 50g peanut oil

1. Put the flour into a bowl, add yeast and water, mix well, make into dough, cover with a wrung-out wet cloth, and let it stand to ferment until the dough is slightly risen and becomes tender yeast.

2. Fry the peppercorns and fennel in a pan until fragrant, then crush them. Add sesame paste, salt and peanut oil, mix well and set aside.

3. Put the dough on the chopping board, add baking soda, knead it evenly, divide it into small pieces, knead it into a rectangle, spread it, and swing it into long slices with your hands. Spread it with fried sesame paste, roll it into a tube shape, flatten it, brush it with sugar color, and sprinkle it with sesame seeds to make the raw dough for the sesame seed cake.

2. Sesame Sauce Biscuits

Ingredients: 300g flour, 5g yeast, warm water, 45ml sesame paste, 10g salt, 8g sugar, 15ml soy sauce, 15ml sesame oil, 100g sesame seeds

1. Dissolve the yeast powder in about 100ml of warm water, then add salt to the flour and mix well. Pour the salt into the flour and stir with chopsticks until the flour begins to clump. Then rub it with your hands. If the flour cannot clump, slowly add water until the dough is even and smooth. Then cover it with a wet cloth and let it ferment in a warm place for 1 hour.

2. While the dough is fermenting, prepare sesame paste: mix sesame paste, sugar and soy sauce evenly, then slowly add warm water and stir until the sesame paste is diluted without lumps and can be slowly left when picked up with chopsticks;

3. After the dough is fully fermented, knead it evenly with your hands, sprinkle a thin layer of flour on the cutting board, and roll the dough into a half-centimeter thick pancake;

4. Pour sesame oil on the dough and spread it evenly with your hands, then pour sesame paste on it and spread it evenly with a spoon;

5. Pull one end of the dough and stretch it while slowly rolling it up. Finally, roll it into a long strip and cut it into 3-4 cm long pieces. At this time, turn on the upper and lower fire of the oven and preheat it to 180 degrees;

6. Grab the two ends of the dough and fold it inward, that is, hide the sesame paste exposed outside as much as possible in the white flour, roll it into a ball and flatten it lightly, brush it with a layer of egg liquid and then sprinkle it with sesame seeds. Put it in the oven and bake at 180 degrees for 15-20 minutes, until both sides are golden brown.

3. Bacon and Scallion Pancakes

Ingredients: A. 100g all-purpose flour A. 50cc hot water A little salt B. 270g all-purpose flour B. 30g whole wheat flour B. 150cc water B. 20g each of olive oil and sugar B. 2.5g yeast powder C. 2 slices of bacon C. White sesame seeds, chopped green onions, mayonnaise White pepper and salt to taste

1. Weigh material A

2. Add hot water and mix well

3. Add 10cc of cold water, knead into a ball, and relax for 30 minutes

4. Step 3: Add material B

5. Knead into a dough and ferment for 60 minutes

6. The rod opens into long flakes

7. Add a little white pepper and salt, spread evenly with your hands

8. Add chopped green onion

9. Fold 1/3 inwards on each side.

10. Add bacon and squeeze mayonnaise on top

11. Fold 1/3 from bottom to top

12. Fold from top to bottom and ferment for 50 minutes

13. Brush with honey water (or sugar water) and sprinkle with white sesame seeds (preheat the oven to 170 degrees for 15 minutes)

15. Remove from the oven and slice after cooling
