First, what are the eight steps to open a cast iron pot? Rinse the new iron pot with clean water and wipe it dry with a scouring pad. Note that you should never use detergent to wash the pot. After washing, heat the iron pan on the stove to remove moisture.

Second, heat the iron pan over medium-low heat, and use tongs to hold the lard and wipe the inside of the pan repeatedly, starting from bottom to top and wiping in circles from the middle to the sides. The lard will slowly melt and adhere to the inner wall of the pan. Turn off the heat when the lard in the pan turns black and mushy. Let the iron pan cool naturally and then wash the pan with clean water. Still do not use detergent.

Third, the parts where the lard has turned black and sticky can be cut off. After washing the pot, dry it on the stove and continue to open the pot according to the second step. The entire lard rubbing and cleaning process must be performed three times or more.

Fourth, after rubbing the iron pan with lard three to four times, clean it. Dry the iron pan on the stove fire, use kitchen paper dipped in cooking oil to smear the inner wall of the iron pan, and the whole iron pan is done. Remember, try not to use detergent to wash the iron pan after normal use, as that will remove the grease on the surface of the iron pan, making the iron pan prone to rust and sticking. After each use, the iron pan should be placed on the stove to dry and try to apply a little cooking oil. Over time, an ordinary iron pan will become a real non-stick pan and will never rust.

First, brush it with steel wool and detergent, wash it, and remove rust in advance; buy a piece of fatty pork and about a pound of leeks, put them in the pot, turn on the fire, roast them, and stir-fry them at the same time. Cook them for a while to produce a few ounces of oil, then put the leeks in, and use a spatula to scrape the pot continuously; turn off the heat, wait for the pot to cool, and then brush the pot with steel wool (don't throw away the fatty pork and leeks), until the black stuff on the pot fades a little; don't move anything, leave it overnight, and deal with it the next day. When you use the pot the next day, wash it again, boil water once, pour it out, and it can finally be used.
