The dough is ready when the indentations made by pressing your finger on the dough no longer disappear immediately but bounce back. The dough should be 2-2.5 times larger than the original size.

Core: The first fermentation generally requires a temperature of 28-32°C, which is easy to do. It can usually be fermented at room temperature. Even if the temperature is not reached, it can be solved by extending the fermentation time. At this time, the dough has not been shaped, and simply covering the dough with plastic wrap or a wet cloth can create sufficient humidity.

2. Take the fermented dough out of the container, press it with your hands to release the air, and the dough will become smaller. Divide the dough into several pieces and let it rise at room temperature for 20 minutes. Both exhaust and proofing are very important. Do not skip them. This step is the key to whether the bread can have a good shape.

3. Shape each small dough into your favorite shape. If you are making toast, divide it into 2-3 pieces, roll each piece into a pancake, and then roll it up. Be careful to roll it tightly, otherwise there will be large gaps in the baked bread.

Second fermentation:

1. Place the shaped dough on the baking tray, making sure to leave some space between them, as the dough will expand further during the second fermentation. Place the baking tray in the oven, place a pot of hot water underneath the oven, and close the oven door. Regardless of how the upper and lower fire of the electric oven are set, just turn it to the left, turn on the thawing/fermentation function of the electric oven, and choose 30-45 minutes for fermentation.

The suitable fermentation environment for the second fermentation dough is a temperature of 38°C and a humidity of 80%. If necessary, the hot water should be replaced once in the middle. When the dough rises to 2-2.5 times its original size, it is ready.

2. Be careful not to touch the dough after it has risen! Put the risen dough into the oven and bake.
