Can vinegar that has been used to soak ginger be used again?

Many people make ginger soaked in vinegar for the first time. Because they do not control the dosage well, they put too much ginger and some pour too much vinegar. In fact, it is easy to cause waste if you do not control it well. After the ginger is soaked, a lot of vinegar will be left in it. In fact, these can be used as soup, and can also be put into cooking. If the vinegar is exposed to the outside for a long time and is not sealed well, it is recommended not to reuse it.

history

Ginger has been used to cure diseases and maintain health for a long time. As early as the Spring and Autumn Period, Confucius had the habit of eating ginger all year round. In "The Analects of Confucius: Xiangdang", there is a saying that "do not eat without ginger, but do not eat too much."

Zhu Xi of the Southern Song Dynasty said in the Annotations to the Analects: "Ginger can communicate with the spirit, remove filth and evil, and help the unremovable." There is also a record about ginger in the earliest existing Chinese medicine monograph "Shennong's Herbal Classic": "Dried ginger, spicy and warm, mainly treats chest fullness, cough and shortness of breath, warms the middle to stop bleeding, sweats, expels wind and dampness, and diarrhea." Li Shizhen also praised the wonderful use of ginger in the Compendium of Materia Medica: "Ginger, spicy but not laborious, can be a vegetable, can be mixed with other herbs, can be a fruit, and can be a medicine."

The soup made with ginger is also known as "resurrection soup". It was also recorded in Su Dongpo's "Miscellaneous Symptoms" that a monk in Qiantang Jingci Temple was over 80 years old, but his complexion was like that of a child. When asked the reason, he said, "I have been taking raw ginger for 40 years, so I don't age." There are also sayings among the people such as "Eat three slices of ginger in the morning and you won't need to take medicine", "Have ginger in winter and you won't be afraid of wind and frost", "Eat radishes in winter and ginger in summer and you won't need a doctor to prescribe medicine", and "Keep some ginger at home and you won't panic when you have a minor illness".

practice

First cut the ginger into thin slices. It is best to use fresh ginger, which has very good medicinal effects and can also enhance blood circulation and promote digestion. The ginger slices do not need to be cut too thick, but they must be cut evenly.

Choose original vinegar. If you use vinegar essence or blended vinegar, it will not have the effect described by traditional Chinese medicine. The people in western Henan have been using persimmon vinegar to pickle ginger for thousands of years. Although the living conditions of the locals are very poor, their average life expectancy is relatively high.

Put the chopped ginger in a bottle, and then pour the vinegar into the bottle. Note that the bottle must be clean and there must be no oil in the bottle to prevent the ginger from spoiling. The vinegar must cover the ginger slices and the ginger slices cannot be exposed. Then store the bottle of ginger slices soaked in vinegar in the refrigerator. After a week, you can eat 2 to 4 slices of fresh ginger every day, which has a very good effect in lowering blood lipids and assisting in the treatment of arthritis. If taken for a long time, it will not harm you when you are old and can also prolong your life.
